Up to 4 aircraft may engage a UFO at the same time. The thing is that when you have an interception window up the geoscape is paused. To do this on purpose, do the following:
Order the fighters to intercept the UFO as normal.
When the first fighter reaches the UFO, the interception window pops up and the geoscape is paused.
If the aircraft is in standoff mode and at maximum range, you can click the minimize window button in the top left corner of the window.
The window will be minimized and the geoscape will resume.
Repeat until all craft have reached the UFO.
When the last craft has reached the UFO, click the various craft icons to bring them all back up.
Click the desired engagement mode in intercept windows.
All craft will close and engage the target. When the UFO fires, it selects which craft to shoot at randomly.
